This Slow Cooker Cheesy Potatoes recipe is the perfect comforting side dish, made with rich cheese and tender potatoes, all cooked to perfection in a slow cooker. Great for potlucks, holiday gatherings, or weeknight dinners!

  • 1 bag (32 oz) frozen diced hash brown potatoes
  • 2 cups shredded cheddar cheese
  • 1 can (10.5 oz) condensed cream of chicken soup
  • 1 cup sour cream
  • 1/2 cup chopped onions
  • 1/4 cup melted butter
  • Salt and pepper to taste
  • Optional: chopped green onions for garnish

Instructions

  1. Spray the inside of your slow cooker with nonstick cooking spray.
  2. In a large bowl, mix together the hash browns, cheddar cheese, cream of chicken soup, sour cream, chopped onions, and melted butter. Season with salt and pepper.
  3. Transfer the potato mixture into the slow cooker, spreading it evenly.
  4. Cover and cook on low for 4-5 hours or on high for 2-3 hours, until the potatoes are tender and the cheese is melted and bubbly.
  5. Stir before serving and garnish with chopped green onions if desired.
