1 lb boneless, skinless chicken breasts
16 oz potato gnocchi
1 cup heavy cream
4 cups chicken broth
2 cups spinach, chopped
1 medium onion, diced
2 medium carrots, diced
3 celery stalks, diced
3 garlic cloves, minced
1 tsp dried thyme
1 tsp dried basil
1/2 tsp black pepper
Salt to taste
2 tbsp olive oil
Instructions
In a slow cooker, combine chicken breasts, onion, carrots, celery, garlic, chicken broth, thyme, basil, salt, and pepper.
Cover and cook on low for 6-8 hours or high for 3-4 hours until the chicken is fully cooked and tender.
Shred the chicken using two forks and return it to the slow cooker.
