Ingredients

Scale
  • 2 pounds beef stew meat or chuck roast, cut into 1-inch cubes

  • 1.5 pounds baby potatoes, halved

  • 6 tablespoons unsalted butter

  • 6 cloves garlic, minced

  • 1 teaspoon dried thyme

  • 1 teaspoon dried rosemary

  • 1 teaspoon paprika

  • Salt and black pepper to taste

  • 1 tablespoon olive oil

  • Optional: fresh parsley for garnish

Instructions

  1. Sear the beef: In a skillet, heat olive oil over medium-high heat. Sear beef cubes until browned on all sides.

  2. Prepare garlic butter: In a small saucepan, melt butter and stir in minced garlic, thyme, rosemary, paprika, salt, and pepper.

  3. Assemble in slow cooker: Add seared beef and halved baby potatoes to the slow cooker. Pour garlic butter mixture over the top and stir to coat.

  4. Cook: Cover and cook on low for 6–7 hours or high for 3–4 hours, until beef is fork-tender and potatoes are soft.

  5. Serve: Garnish with chopped fresh parsley if desired.

Notes

  • For extra richness, add a splash of beef broth or Worcestershire sauce before cooking.

  • Yukon gold or red potatoes work best and hold shape well.

  • Leftovers can be stored in the fridge for up to 3 days.
