2 pounds beef stew meat or chuck roast, cut into 1-inch cubes
1.5 pounds baby potatoes, halved
6 tablespoons unsalted butter
6 cloves garlic, minced
1 teaspoon dried thyme
1 teaspoon dried rosemary
1 teaspoon paprika
Salt and black pepper to taste
1 tablespoon olive oil

Sear the beef: In a skillet, heat olive oil over medium-high heat. Sear beef cubes until browned on all sides.
