3 lbs Yukon Gold potatoes, peeled and chopped
1 cup mayonnaise
2 tbsp yellow mustard
3 hard-boiled eggs, chopped
1/2 cup celery, finely diced
1/2 cup dill pickles, chopped
1/4 cup red onion, finely diced
1 tbsp apple cider vinegar
Salt and black pepper to taste
Paprika for garnish
Boil potatoes in salted water until tender, about 10-12 minutes. Drain and cool slightly.
In a large bowl, combine mayonnaise, mustard, vinegar, salt, and pepper.
