  • 12 oz pasta (penne or rigatoni)
  • 1 lb spicy Italian sausage
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 3 garlic cloves, minced
  • 1 can (14 oz) diced tomatoes
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 tsp red pepper flakes (optional)
  • 1 tsp dried basil
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  • Cook pasta according to package instructions until al dente. Reserve 1 cup of pasta water and drain the rest.
  • Heat olive oil in a large skillet over medium heat. Add sausage, breaking it into crumbles, and cook until browned.
  • Add diced onion and garlic, cooking until softened and fragrant.
  • Stir in diced tomatoes, heavy cream, red pepper flakes, basil, salt, and pepper. Simmer for 5-7 minutes.
  • Add cooked pasta to the skillet and toss to coat in the sauce. Use reserved pasta water to adjust consistency if needed.
  • Sprinkle Parmesan cheese over the pasta, stir, and cook for 2 minutes.
  • Serve hot, garnished with fresh parsley.
