  • 1 cup sushi rice

  • 1 1/4 cups water

  • 2 tablespoons rice vinegar

  • 1 tablespoon sugar

  • 1/2 teaspoon salt

  • 1/2 pound cooked shrimp, chopped

  • 2 tablespoons mayonnaise

  • 1 tablespoon Sriracha

  • 1 avocado, diced

  • 1 cucumber, diced

  • 2 sheets nori, finely chopped or crumbled

  • Sesame seeds, for garnish

  • Soy sauce, for serving

Instructions

  • Cook the Rice: Rinse sushi rice until water runs clear. Cook rice with water. Once cooked, stir in rice vinegar, sugar, and salt. Let cool.

  • Make the Spicy Shrimp: In a bowl, mix chopped shrimp, mayonnaise, and Sriracha until coated.

  • Prepare Toppings: Dice avocado and cucumber; crumble nori sheets.

  • Assemble Stacks: Use a measuring cup or small mold. Layer rice, cucumber, avocado, spicy shrimp, and nori.

 

  • Garnish and Serve: Carefully remove from the mold. Sprinkle with sesame seeds and serve with soy sauce.
