  • 3 cups all-purpose flour

  • 1 egg
  • Zest and juice of 1 lemon
  • 2 cups fresh strawberries (chopped)
  • 2 cups fresh rhubarb (chopped)
  • 1/2 cup sugar (for filling)
  • 2 tsp cornstarch

Instructions

  • Preheat oven to 375°F (190°C) and grease a 9x13-inch baking dish.
  • In a large bowl, combine 1 cup sugar, baking powder, flour, and salt. Cut in butter until crumbly.
  • Mix in egg and lemon zest. Press half of this mixture into the prepared baking dish.
  • In another bowl, mix strawberries, rhubarb, lemon juice, 1/2 cup sugar, and cornstarch.
  • Spread the fruit mixture evenly over the crust.
  • Crumble the remaining dough over the top.
  • Bake for 40-45 minutes, or until golden brown. Cool completely before slicing.

Notes

  • You can substitute frozen fruit if fresh isn't available. Just thaw and drain well.
