Instructions

  1. In a saucepan over medium heat, combine blueberries, sugar, and lemon juice. Cook until berries burst and mixture thickens (5–7 minutes). Cool completely.

  2. Swirl the cooled blueberry mixture into the softened vanilla ice cream.

  3. Scoop about 1/4 cup of the blueberry ice cream onto one cookie and top with another to make a sandwich.

  4. Place sandwiches on a tray and freeze for at least 2 hours or until firm.
