12 oz spaghetti or soba noodles
1/4 cup sesame paste (tahini) or peanut butter
2 tbsp soy sauce
1 tbsp rice vinegar
1 tbsp sesame oil
1 tbsp honey or maple syrup
1 garlic clove, minced
1 tsp grated fresh ginger
2–4 tbsp cold water (to thin sauce)
1/2 cup julienned carrots
1/2 cup thinly sliced cucumber
2 green onions, chopped
1 tbsp toasted sesame seeds
Optional: red pepper flakes or sriracha for heat
Cook noodles according to package instructions. Drain and rinse under cold water to cool.
In a mixing bowl, whisk together sesame paste, soy sauce, rice vinegar, sesame oil, honey, garlic, and ginger.
Gradually add cold water until the dressing is smooth and pourable.
Toss the cooled noodles with the sauce until evenly coated.
Add carrots, cucumber, and green onions. Mix well.
