  • 4 medium russet potatoes
  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/2 cup diced tomatoes
  • 1/4 cup chopped green onions
  • 1/4 cup sliced black olives (optional)
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  • Preheat oven to 400°F (200°C). Wash and scrub potatoes, then pierce each with a fork. Rub with olive oil, salt, and pepper.
  • Bake potatoes for 50-60 minutes or until tender.
  • Meanwhile, cook ground beef in a skillet over medium heat until browned. Drain excess grease, then add taco seasoning and water as directed. Simmer for 5 minutes.
  • Once potatoes are cooked, slice them open lengthwise. Fluff the insides with a fork.
  • Top each potato with taco meat, shredded cheese, sour cream, diced tomatoes, green onions, and olives.
  • Serve immediately and enjoy!
