  • 3 cloves garlic, minced

  • 1 tablespoon fresh ginger, grated

  • 1 can (13.5 oz) coconut milk

  • 2 tablespoons red Thai curry paste

  • 1 tablespoon fish sauce

  • 1 tablespoon lime juice

  • 1 teaspoon brown sugar

  • 1/4 teaspoon crushed red pepper flakes (optional)

  • Salt to taste

  • Fresh cilantro or basil for garnish

  • Cooked rice or noodles, for serving

Instructions

  • Heat oil in a skillet over medium heat. Add garlic and ginger, sauté for 1-2 minutes until fragrant.

  • Stir in red curry paste and cook for 30 seconds.

  • Pour in the coconut milk, fish sauce, lime juice, and brown sugar. Stir to combine.

  • Simmer for 3-5 minutes, letting the flavors meld.

  • Add the shrimp and cook until pink and opaque, about 3-4 minutes.

  • Season with salt and red pepper flakes (if using).

 

  • Garnish with fresh herbs and serve over rice or noodles.
