  • 1 cup buttermilk
  • 1 cup all-purpose flour
  • 1 cup breadcrumbs or panko
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/4 tsp cayenne pepper (optional)
  • Cooking spray or olive oil

Instructions

  • Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper or a wire rack.
  • Marinate the chicken in buttermilk for at least 1 hour (or overnight for best results).
  • In a shallow bowl, mix flour, breadcrumbs, paprika, garlic powder, onion powder, salt, pepper, and cayenne.
  • Remove chicken from buttermilk, allowing excess to drip off, and coat in the breadcrumb mixture.
  • Place the coated chicken on the prepared baking sheet or rack. Spray lightly with cooking spray or drizzle with olive oil.
  • Bake for 40-45 minutes, flipping halfway through, until the chicken is golden and crispy and the internal temperature reaches 165°F (74°C).
  • Let rest for 5 minutes before serving.
