  • 2 pounds Yukon Gold potatoes, peeled and diced

  • 3/4 cup mayonnaise

  • 2 tablespoons Dijon mustard

  • 1 tablespoon apple cider vinegar

  • 3 hard-boiled eggs, chopped

  • 2 celery stalks, diced

  • 1/2 cup red onion, finely chopped

  • 1/4 cup dill pickles, chopped

  • Salt and pepper to taste

  • Optional: paprika and chopped chives for garnish

Instructions

  • Place diced potatoes in a large pot, cover with water, and boil until tender (about 10-12 minutes). Drain and cool.

  • In a large bowl, mix mayonnaise, mustard, vinegar, salt, and pepper.

  • Fold in potatoes, eggs, celery, red onion, and pickles.

  • Chill in the refrigerator for at least 1 hour before serving.
