  • ½ cup cream cheese, softened
  • ½ cup shredded mozzarella cheese

  • 1 tsp dried Italian herbs
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  • Preheat oven to 375°F (190°C).
  • Slice each chicken breast horizontally to create a pocket. Season with salt, pepper, and Italian herbs.
  • In a bowl, combine spinach, cream cheese, mozzarella, and garlic. Stuff each chicken breast with the mixture and secure with toothpicks.
  • Heat olive oil in a skillet over medium heat. Brown the chicken on both sides for 3-4 minutes.
  • Transfer to a baking dish and bake for 20-25 minutes or until fully cooked.
  • Let the chicken rest for 5 minutes before serving.
