    • 1 ½ cups all-purpose flour
    • 1 ½ tsp baking powder
    • ¼ tsp salt
    • ½ cup unsalted butter, softened
    • ¾ cup granulated sugar
    • 2 large eggs

    • ½ cup whole milk
  • For the Espresso Soak:

    • ½ cup brewed espresso or strong coffee, cooled
    • 2 tbsp coffee liqueur (optional)
  • For the Mascarpone Frosting:

    • 8 oz mascarpone cheese
    • 1 cup heavy whipping cream
    • ½ cup powdered sugar
    • 1 tsp vanilla extract
  • For Garnish:

    • Unsweetened cocoa powder
    • Chocolate shavings (optional)

Instructions

  1. Prepare the Cupcakes:

    • Preheat oven to 350°F (175°C). Line a cupcake pan with liners.
    • In a bowl, whisk together flour, baking powder, and salt.
    • In a separate bowl, beat butter and sugar until light and fluffy. Add eggs one at a time, then mix in vanilla.
    • Alternate adding the dry ingredients and milk, mixing until just combined.
    • Divide batter evenly into cupcake liners and bake for 18–20 minutes. Let cool.
  2. Prepare the Espresso Soak:

    • Mix brewed espresso and coffee liqueur. Brush or drizzle over cooled cupcakes.
  3. Make the Mascarpone Frosting:

    • Beat mascarpone, heavy cream, powdered sugar, and vanilla until smooth and fluffy.
  4. Assemble the Cupcakes:

    • Pipe frosting onto soaked cupcakes. Dust with cocoa powder and top with chocolate shavings if desired.

Notes

  • For a non-alcoholic version, skip the coffee liqueur.
  • Keep cupcakes refrigerated until serving.
